Do not cancel the host you are currently using.
Set up your account with your new host.
Down load all your web site files from your current host, then upload them to the new host using the FTP.
Duplicate your web site email addresses on the new host to ensure that you do not miss any emails.
Check all your links on the files that got transferred, if there are any problems correct them.
Change your DNS (domain name server) to the new host.
Wait at least 48 hours after you switch the DNS to the new server before you cancel the old host.
If you do these steps you can avoid losing down time. Good luck.

Thanks for this good information. I will remember this when I switch my hosting next month.

If you're using GoDaddy, DNS will often update within minutes.
