Every time I roast meat with pumpkin I also roast the pumpkin seeds. They are great source of goodness (heaps of zink) and they taste nice also. All these seeds need is just a simple quick wash and on any old pizza tray they get done to golden color pretty fast. You could find them in my pockets quite often Smiley

Those pumpkin seeds are definitely healthy & look great. Pumpkin seeds are a good source of vit A, calcium & iron.
Pumpkin seed oil contains both omega-3 and omega-6 essential fatty acids.

I don't like those in my grocery shop as they're too saltish. I've to find some raw ones & roast them.

You know I eat them without bothering with their skin, it's not too hard to chew, probably great source of fiber, a fiber that acts like a brush for guts. Green inside clean inside.

I find that the skin is too tough but no doubt it has a lot of fibre which we need.
