I've been using WHOIS privacy protection on all of my domains in all the different registrars I've used. I was wondering if the ownership technically falls to the company I have my WHOIS privacy with? Doesn't that mean the domains technically don't belong to me anymore? Should I stop using WHOIS privacy if any of my domains start to gain more value?

The domain is yours, NOT of the company with whom you have the WHOIS privacy. The privacy service is just a mailbox in case somebody wants to contact you, and does not affect your ownership in the same way that hiring a postal PO box would affect the ownership of your house.

The only thing that you need to keep an eye on is to make sure that NOBODY gets access to your account at your registrar, because that is teh only place where somebody could actually steal your domains.
